Easy As Cheese, Cheese Ball

My mom used to make this all the time for us growing up and we still have it at every family function!! We love it!!

Easy Cheese Ball

2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package ranch dressing mix
2 1/2 cups shredded Cheddar cheese
1 1/2 cups chopped pecans

In a medium size bowl, mash cream cheese. Mix dressing mix and Cheddar cheese into the cream cheese. Shape the mixture into a ball. Roll the ball in the chopped nuts. Refrigerate covered until ready to serve. Serve with crackers (not Chicken in a Biscuit crackers, they are too salty with this. I like Ritz the best.)

This is considerably better the next day. For a variation it is also good with chives and some cooked and crumbled bacon. Yummy!!

YUMMY! I've never made this variation, but will have to try it out! My mom would go nuts for this with the pecans. I roll mine in seasoned pepper for a little "zing."
