This is a recipe I modified from allrecipes.com
Stuffed Pepper Soup
1 pound ground beef
1 chopped green pepper
1 cup chopped onion
1 can diced tomatoes
1 can tomato sauce
1 can water
1/4 teaspoon dried garlic
1/4 teaspoon dried sage
1/4 teaspoon thyme
salt and pepper to taste
1 cup white rice
Brown ground beef. Drain fat and add pepper and onion. Cook until onion is clear.
Add tomatoes, tomato sauce, water, garlic, sage, thyme and season with salt and pepper. Cover and simmer for 30 to 45 minutes, until peppers are tender.
In another saucepan cook rice according to package directions and then add to soup. Let soup simmer until everything is warm through.
